Sambar Idly is a delicious South Indian dish where soft steamed idlis (rice cakes) are served soaked in a flavorful sambar, a spiced lentil-based stew. It's a comforting and wholesome meal often enjoyed for breakfast or as a light meal. Here's how you can make it at home.

Ingredients:

For Idli:

  • 1 cup idli rice
  • 1/2 cup urad dal (split black gram)
  • 1/4 tsp fenugreek seeds
  • Salt to taste
  • Water (for soaking and grinding)
  • Oil or ghee for greasing idli molds

Alternatively, you can use ready-made idli batter.

For Sambar:

  • 1/2 cup toor dal (pigeon pea lentils)
  • 1 small carrot, chopped
  • 1 small onion, chopped
  • 1 small tomato, chopped
  • 1 small brinjal (eggplant) or drumstick (optional)
  • 1-2 tbsp sambar powder
  • 1 tsp turmeric powder
  • 1-2 tbsp tamarind pulp
  • Salt to taste
  • Water as needed

For Tempering:

  • 1 tbsp oil or ghee
  • 1 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 2 dried red chilies
  • 8-10 curry leaves
  • A pinch of asafoetida (hing)
  • Fresh coriander leaves for garnish
